My First Fancy Cake

So, I posted a few days ago about making Marshmallow Fondant. Well, I didn't just make it cause I felt like making a tasty mess, I had a project in mind. I was making a surprise groom's cake for Justin's friend Josh's wedding today. It all started as kind of a joke, but then being that I had always wanted to learn how to do cakes with fondant, I figured now was as good a time as any to give it a try.

First, I made 4 batches (Good Gosh!) of my favorite Red Velvet Cake recipe from the Hummingbird Bakery in London. While this cake is delicious, the recipe is in metric measurements (a.k.a. grams and ounces), so in order to make the recipe, I had to first weigh everything - a big pain in the patoot. And I had to do it in 4 separate batches because I had tried doubling the recipe once before and it didn't turn out like it should. So, I would mix a batch, then put it in the pan; mix another batch and put in in the pan with the previous batch. It took 2 batches to make one layer of cake in my 13x9 pan, so it took 4 to have a 2 layer cake, follow me? Anyway, lots of work with mixing, yaddah yaddah. I used my favorite recipe for cream cheese frosting from my friend Angela instead of the one from the Hummingbird Bakery recipe, which is incredibly fickle - besides, Angela's icing is seriously delicious. I wanted to sit with the bowl and a spoon and just eat it all.

So, I layered the cake and put cream cheese frosting in the middle. Then, I cut out the pieces to reveal the neck of the cake. My cake's top needed to be taller, so I pieced an extra bit of cake and attached it with some toothpicks. Here was my cake after it was carved.
Then I covered the cake with the cream cheese frosting to "crumb coat" it. This gives the fondant something to stick to so it doesn't slide around on you. *Speaking after the fact, I put to much frosting on. It was squirting out the sides at the base when I was smoothing the fondant, so learn from my mistake ... make it a thin coat.
Next, I had to roll out my fondant, which was quite the mess and it really does take a lot of space. It literally took up my whole counter.
After rolling out the fondant, I smoothed it over the cake and cut it to fit. I even had to try to smooth out my seams on the corners, which was easier said than done. I was beginning to wonder if this is one of the reasons why most cake makers don't like to use marshmallow fondant...

Next, I had to paint my cake, which was the recommendation of my cake making friend Leigh. She had made this same cake before, plus had lots of experience with fondant, and she said I should just paint it or my colors would not be right. So, paint it I did. I used food coloring gel mixed with vodka - also a tip from Leigh. She said that water leaves the fondant sticky when it dries, but the vodka just evaporates, leaving it dry. She was very right.
Here was my painting set up.
After getting my first coat of color on, I decided the cake needed to be a little more brown, but was having a hard time getting the right color, so I got a little experimental and used some of my favorite Mexican vanilla. For those of you who don't know, vanilla extract is made by soaking vanilla beans in vodka, so it also evaporated leaving the surface dry. Plus, it made it taste awesome :)

After I got the cake completely painted, I mixed some black food coloring into some more fondant to at least give it a body color other than white - I didn't want the white to show at all. It took lots of coloring and it still was only a purple color and it was very dry and brittle, so I wouldn't recommend it. I rolled out another piece of fondant and cut out two pieces in the sizes I needed. I put a little bit of icing on the cake where I wanted the black fondant to go so it would stick, and I smoothed it out. Next, I had to paint it black. Man was that a challenge. You have no idea how much food coloring it takes to really achieve black black until you try it yourself. And mine was actually a greenish black unless I coated it on thick. I ended up mixing it with the vodka and vanilla and letting it evaporate a bit into more of a thick goo. This made it so much easier to get it to stick to the sides and it made a nice, even coat. This was the most challenging part of my cake.

After my painting was finished, all that remained was to write on it. I printed out a picture of the real deal so I could try to copy it and did some practice runs on my plates. I've never been very confident in my writing on cakes, so I really didn't want to mess it up. So now, the jig is up, I was making a Jack Daniel's cake :)

It may not be exactly like the real thing, but it was certainly close enough to tell what it is at a glance. I have to admit, I am quite proud of my first cake. I've never worked with fondant before or done anything this detailed in my life, but it really did come out great. It did, however, take absolutely forever! I easily have a full 24 hours in this cake with making all the components and then assembling and decorating the cake. I have a new found appreciation for those who do this all the time and love it. I may have complained like crazy at the time, but I was very happy with the results and I loved everyones reaction at the wedding. Everyone loved it, most especially Josh, which was who I mainly made it for.

I have to confess, I was mostly excited about this not for the free candy bars, but for my patience paying off. Before Valentine's Day, I found a peelie pad at Publix with coupons for $1 off 2 Butterfinger Bars or Butterfinger Snackerz. Even better, this peelie pad had no joke at least 500 coupons on it all there for the taking. So, I pulled off a small stack not knowing how many I had actually taken until later. I ended up with 20 coupons. Now, I had used a few from then to now on various other deals and got those for free as well; but as the coupons expire at the end of May, I decided this was the time to cash them all in.

So, how did I get all this for free, you ask? CVS currently has a deal that select Nestle products are 2 for $1. Factor in my coupons and that's 2 for free (just pay the tax). On top of that sale, CVS has a deal that if you spend $20 on select Nestle products, they will give you $5 in ECBs. So, after getting my 32 butterfingers and just paying the tax, I had to buy 8 more candy bars to make up the amount I needed for the ECBs - I just had to. I was so close to the mark! So, after the additional, "non-free" candy bars and the tax on my butterfingers, my total was $4.90 and the register printed out my $5 ECBs. So, I made $0.10 - hey, it's something. Even better still, I used previously obtained ECBs to pay for the difference, so I didn't have to put any money out of pocket. Plus, they scanned my green bag tag :)

Ah, that's a lot of free goodness :)

So, my last bit of Fun in the Mail this week was my freebie from Vocal Point that I've been waiting for. When I first started couponing, Collin at Hip2Save was always singing the praises of this website with all the free stuff and high value coupons she received from it. So, I joined and waited for my stuff. I will say, it did take a while. I joined back in December and this is my first full on freebie I've gotten, but there is another on the way and I have gotten some printable coupons as well. So, I say it is definitely worth joining.

Vocal Point is an online forum to gain consumer opinions about products and spread the word about new ones. They have random polls and surveys about all sorts of things for their members, along with recipe ideas and message boards for members to interact. They also have random campaigns they run to promote things. Currently, they have campaigns for Frosted Mini Wheats With A Touch Of Fruit, Starkist Tuna Sensations, and International Delight Breve Crème. I requested my Mini Wheats, but my husband and I are not fans of tuna, no matter how sensational, so I did not take part in that one. But today, my Breve Crème came in the mail :)
I was surprised to find a cellophane wrapped cardboard coffee cup in my mailbox, but it was really a cute way of sending it. Inside my coffee cup (which is totally usable) was everything pictured:
  • A pamphlet about how Breve Crème doesn't have the typical aftertaste
  • A 'desk clock' sign that says what time you will be back at your desk
  • 1 coupon for a Free pint of Breve Crème
  • 5 coupons for $0.55 off any International Delights pint
I'm really excited about this. I don't drink coffee, but I do drink hot chocolate and I like to use flavored creamer in it to switch things up a bit :) Also, coffee creamer can be used in baking - I recently used crème brulée flavored creamer in place of half and half in a recipe and it was delicious. I'm very excited about the potential of this creamer ... plus it's FREE! Wahoo! Now I guess I just have to decide who my 5 friends are ;)

Fantabulous Food! Making Marshmallow Fondant

I volunteered to make a special cake for a certain friend of mine. That's really all I can say as it is a surprise, so I can't show you what the cake will be, but I will once the cat is out of the bag :)

Anyway, I said I would try to make this cake and it would be carved into a shape and then covered with fondant, neither of which I have ever done before. Luckily, my best friend Leigh has done cakes as a side business before (she used to operate under Cake Or Death Cakes, but stopped when her son got a little too active to just sit there while she worked), and being the good friend she is, she volunteered her expertise to help me out. So, last night, I started texting her with questions and she said I could either buy my fondant (but the kind I can get locally isn't very good) or I could make my own marshmallow fondant. I chose the latter.

So, I scoured the world wide web and came across this website for a recipe and then bombarded Leigh with random questions throughout the day. Going by the recipe on whatscookingamerica.net, I started off by nuking my 16 ounces of marshmallows with 2 tbsps of water in the microwave for 30 seconds at a time and stirring.
I was very surprised at how quickly the marshmallows were coming together because of the water. It really went very well. This was how it looked - a white bowl of soupy deliciousness :)
Next I smeared my counter top with crisco and poured 3/4 of a 2lb bag of powdered sugar (I couldn't fin the brand the website recommended, so I bought Publix brand) on top of the greased mess. Doesn't it look like cocaine? Just saying. It would have made for an awkward visit by a random authority. Anyway...
I couldn't get pictures of the next part because I was so greasy and then so sticky. So I will describe it to you: One big white powdery mess with sticky goo all over your hands. Yeah. It was messy. I basically poured the really hot marshmallow goo onto the powdered sugar, and just started kneading it together. It went very well at first, then as the batter starts to get thicker, it gets a bit more difficult. I gradually added the remaining 1/4 of the bag of powdered sugar and I ended up having to add a little more water to keep it elastic, but it is on an "as needed" basis. After I worked the dough sufficiently, I greased the white blob well with crisco and put it in a ziploc bag.
I have to say, I was quite proud of my self. I thought it would be much harder than it was, and the result really did come out looking like fondant I've seen used by friends or people on tv. It tasted great too, like a thick and chewy marshmallow :) I guess that's the dangerous part of baking something sweet is you keep breaking off little pieces to taste it.

So, there is my Fantabulous Food! for this week. I can't wait to show you the cake this was for :) It's still in progress, but it really is coming out well - much better than I thought my first fondant cake would be!

I was really excited about the Snyder's of Hanover coupon. On National Pretzel Day (April 27th), Snyder's posted on their Facebook page that the first 500 people to email them on the 27th - a.k.a. the stroke of midnight - would receive a free product. I happened to be up and at my computer and I figured I would give it a shot. There was no confirmation or anything so I'm really shocked that I was one of the first 500 people! In the world of the internet, that's a very small number. Most of the giveaways I try for are the first 5000 or so, and those are usually gone within the first 2 minutes - hopefully that puts the odds in perspective for you. So I was extremely lucky on this one! And knowing that will make my already delicious and Free pretzels taste even better :)

I wonder what I'll get tomorrow....

Well, I had planned on going out today anyway, but I needed to make fondant and needed supplies, so I went out much earlier than I had originally planned. First, I went to Publix:

I also used a $5 off $30 coupon from the newspaper, so for this entire purchase I paid $19.85! This would have been way better had I not needed to get my fondant making supplies right then. But, such is life. At least I geared it toward saving as much as possible :) My receipt says I saved $50.43, so I can live with that.

After Publix, I realized that I needed a cake board, so I had to go to Walmart. While I was there, I wanted to get some of my freebies if they had them (they were all out of several things I would have gotten for free).

      Late Night at Target

      I ran into Target tonight to get a few of my freebies :)

      What Has Mickey Mouse Given You Lately?

      For all you Disney-Loving-Folk out there, there are rewards for you! If you aren't a member of the Disney Movie Rewards program, you are seriously missing out.
      Many years ago, Disney started a perks program for those who purchase their films. They started putting these little red stars down in the corners of their dvd boxes enticing you to join and get free stuff. I happily took them up on this and it has really worked out to my benefit :)

      It's incredibly easy to become a member. Their home page explains all the ins and outs of how the program works in a quick video.
      Basically, every eligible Disney dvd comes with a card inside that has a unique code. When you enter that code on DisneyMovieRewards.com, a certain number of points will be added to your account. Most dvds are 100 points, Blurays 125 points. You can also earn points from games, cds and movie tickets - yes, the movie ticket thing does work, I have submitted several tickets by now and I have gotten the points on them all. Also, DMR sends around a monthly summary of your account entitled "Your Members-Only Update" that will contain a code for at least 5 points. So, even if you don't buy any dvds, you can still get stuff!


      Several of the prizes cost nothing and some cost very little, and if you have a child, some of them they would absolutely love. For example, they have one reward called "Enchanted Calls" in which you child's favorite Disney princess will call them on the phone on a specific day like their birthday. Would you have not flipped out over that when you were 4 or 5? I thought so. 


      Obviously, since I'm posting about it, I do like this reward program. I'm a member of pretty much any reward program I am eligible for, and this is without a doubt the one I have gotten the most stuff from. Over the years I have received:

      Coupons 4 Cuba

      One of the other employees where I work recently immigrated here from Cuba. He is still working on his English, but we still have conversations about the oppressive conditions that drove him to leave his homeland and his family members behind. His parents, siblings and oldest son still live in Cuba, so he goes back as often as he can afford to visit them. Each time he goes back, he tries to bring everyday items with him that are expensive or difficult to get there. Just this week, he told us he will be going back to visit Cuba on May 29th and he will be bringing toiletries with him. Apparently they are incredibly expensive in Cuba so many are forced to go without. When he told this to my mom and me, we both decided to use our couponing abilities to help out. I'm calling our project...
      There have been many deals available lately that I have taken advantage of to add to my stockpile even though they were items I knew I would not use. Sometimes, you have to purchase items that you would not normally buy in order to get overage on your bill to cover the cost of items that you may not have coupons for, which makes your overall total even out. Stores will rarely give you money back if you achieve overage, so you have to purchase other things to absorb that extra money they store will give you; if you do not buy anything else, the store basically gets that money, so it is always in your best interest to use it up. So, for example, last week I bought 8 packs of disposable razors and the store paid me $0.51 each pack to take them. So, even though I normally would not purchase disposable razors, I was able to get other things by purchasing these razors. Now, for just my husband and I, that's a crazy supply of razors. And contrary to popular belief, razors do go bad - they rust. I have personally experienced it. So, I will be starting off my donation to my Cuban friend with some of these razors :) It will make the deal even better when the items get to people who need and will appreciate them.

      So, I am opening this up to anyone who reads my blog.         Green Meadows Farm Deal

        Hey everyone! Sorry for my absense over the weekend. I hope you all had a nice one :) Personally, I needed a little break from the coupons. But now, I am back and ready to kick off the week!
        Today, Living Social has a great deal for Green Meadows Farm in Kissimee. If you have kids, you need to take advantage of this offer. When I was little, we would go to Green Meadows Farm on field trips at school or just as a family (we would go in October because you got to pick a pumpkin!) Green Meadows Farm is an active farm that they use like a petting zoo. IT's a wonderful way to teach small children about animals or where food comes from. They get to pet them all. They have cows you can milk, goats you can chase, trains you can ride. All in all it's a fun time for anyone, but incredibly memorable for children (trust me, I have to worst memory in the world, but I can remember it and i haven't been for more than 10 years).

        The deal is for a half price ticket - normally admission is $22 and you only pay $11 for this deal. The fine print says the voucher must be used before 9-28-11, which shouldn't be hard to do :)
