Fantabulous Food! Homemade Pie Crust

This is one that sounds much more difficult than it actually is. I had always just purchased frozen pie crust (even my southern cooking from scratch Grandmother relies on the Mrs. Field's crusts), but I wanted to make a pie for my sister's birthday at the last minute and I had no pre-made crusts. Luckily, my husband had bought me the Our Best Bites cookbook for my birthday and it had a quick and easy crust recipe in it and I already had all the ingredients :)

Pie Crust
Ingredients:
  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/3 cup + 1 tbsp butter-flavored shortening
  • ice water (about 1/4 cup)
1. Combine flour and salt in a medium sized bowl.
2. Chop shortening into small cubes and add to flour mixture.
Using two butter knives or a pastry blender, literally cut the shortening into the flour until it is in pea-sized pieces 
- the knives were taking a long time, so I grabbed m widely spread whisk. Make sure the whisk is large and spread apart or else it will become very clumped and not fun to try to clean out.


3. Sprinkle the water onto the flour 1 tablespoon at a time. Do not mix the water in - you want to just moisten the flour. The point is to handle the dough as little as possible. The less you mess with it, the more flaky and delicious it will be.
I just used a rubber spatula and shifted the dough clumps around in the bowl so all the dough could be moistened.
4. When you have the dough moistened, lightly press it together in to a ball. At this point, you can either wrap it in plastic wrap until you're ready to use it, or you can continue on.
5. To roll out the dough, lightly flour your surface and rolling pin.
Start from the middle of the dough and roll it outwards in all directions to create a circular shape. You want it to be about 1/8" thick.
6. When it is your desired thickness, just wrap the dough over your rolling pin to transfer it into your pie pan.
If you are like me and didn't use enough flour on the counter, take a thin spatula and carefully scrape along as you peel the flour off the surface to keep it from breaking. This dough actually was pretty elastic, but it's always easier if you take any precaution to eliminate the possibility of it breaking.
7. Lightly press your dough down in the corners of the pan. Then, prepare your edges however you would like. I just turned my dough under itself and lightly pressed it together with my fingers. You could also go around the edge and press it with a fork to give a ribbed edge.
8. Before you pour your filling in, you should pierce the bottom with a fork a few times to aerate the dough. This will keep the dough from bubbling up and it will stay pretty.
9. Now fill your pie with whatever filling you want and back according to the filling's directions. If you need to pre-bake the crust, bake it at 450° F for 10-12 minutes until golden brown.
If you are baking a pie that needs a crusted top, like an apple pie, just double the dough recipe and split it in half before you roll it out, then just roll them out separately for the top and bottom.

So, now that you've seen my pictures, I will confess - this was my first pie crust! I have to say, it doesn't look too bad :) So, this recipe really is as easy as the Our Best Bites ladies claim. Hopefully this recipe helps you during the delicious fruit season we have right now :) There are lots of good deals on peaches and berries going on now and any of them would make a delicious pie!

I Just Made $5 At CVS!

Woo Hoo :) I had heard of others doing this deal, but anything that seems to good to be true I am always skeptical of, so I was thrilled that it worked for me too!

So, yeah I got these little guys all for free, but how does that mean I made money? Well, all this month, CVS has a deal that if you spend $20 on Lumene products, you get $5 in ECBs back. Even though these technically were 5¢ short of the total, CVS is nice and they let it go through anyway :) So, I did have to pay the tax on all these, which was $1.20 - I used a $1 ECB from my green bag tag last time and paid 20¢. So, I made $5 off buying these! Woo Hoo!

So, make sure you cut out your Lumene coupons and head down to CVS before the jars are all gone. I've checked the Titusville store twice this week and they are all sold out, but the PSJ store had them :)

Free Peanut Butter & Co Pouches at Walmart

Peanut Butter & Co has a $1 off printable coupon on their Facebook page if you 'like' them. Walmart has individual size pouches of Peanut Butter & Co peanut butter for around 68¢, so this coupon is a 32¢ money maker :)

Publix Trip

I forgot to get my Cool Juice the other day when I went to Publix, so I had to make sure I got them :)

My total after all my coupons was $14.16, but I got to use my $8 gift card I won on My Coke Rewards, so I only paid $6.33 :) Not bad seeing that I didn't really work very hard at all on this trip and got some items just because I wanted them - which I usually don't let myself do. Also, I took my picture with my cart on my WeReward app, so I will get another 50¢ from that :)

P.S. I wandered the store after I checked out because there was a crazy rain storm going on as I was trying to leave, and I got a nice size helping of this weeks Aprons recipe - Confetti Chicken SpaghettiConfetti Chicken Spaghetti. It was really good! And the Aprons lady said it was really easy to make, so if you are at a loss for what to do for dinner this week, you should give it a try!

    Finding Coupons: Always Check Product Packages

    One of the common questions I have gotten when polling various coupon newbies is, "Where do you find those coupons?" Once you start couponing, you will notice that coupons can literally be found everywhere and anywhere! You just have to know where to look for them, so the Finding Coupons segments will be devoted to telling you specific places that are tried and true coupon homes.

    Always Check Your Packages!
    I came home from work to find this box sticking out of our trash can:
    I was not too happy! I quickly pulled it out to clip the coupon before returning it to the can. This incident has inspired me to write about a great source for finding coupons - packaging. 
    Many companies put coupons for your next purchase on the packages of ones you already have, especially if the item is fairly new on the market. They do not always mention the inclusion of coupons on the outside of the box either. This one, for example, was a pleasant surprise:
    This was inside of my roll of Reynold's brand parchment paper :) It's for $1 off 2 rolls.

    One of the greatest things about coupons on packages is the expiration date. The companies don't want to have to constantly change the box design every month, so they usually don't expire until at least December 31st. Many of them don't expire until sometime next year - ex. That Crunchy Nut Cereal coupon up there expires April 30th, 2012! 

    So, if these weren't good enough reasons to get you to give your package a once over before putting it in the trash, maybe a list of some of the coupons I've gotten in the last few months will :)
