Fantabulous Food! Iced Pumpkin Cookies

So, I have a little tradition I started for myself. Every October (because that's when canned pumpkin becomes easily available), I make pumpkin cookies. Growing up, these were and are a Kline family favorite. My mom has to make at least a double or triple batch when she makes them or else they don't last longer than a few hours after she makes them.

So, I felt that I should share this fantastic family recipe (that was given to us by the lovely Carol Fowler) so that everyone can enjoy the new fall season :)

Iced Pumpkin Cookies

Cookie Ingredients:

3/4 cup shortening

1 cup granulated sugar

1 cup brown sugar

1/2 tsp salt

3 cups all-purpose flour

2 tsp baking soda

1/2 tsp nutmeg

1 tsp cinnamon

1/4 tsp baking powder

2 cups canned pumpkin

Icing Ingredients:

1/4 cup butter

1/4 cup milk

1/3 cup brown sugar

1 tsp vanilla

confectioner's sugar (1 whole box)

1. For Cookies: Cream shortening, sugar and 1 cup brown sugar together. - The mixture just becomes kind of evenly crumbly.

2. Sift the next 6 ingredients together (salt, flour, baking soda, nutmeg, cinnamon, and baking powder). Add the dry mixture to the creamed mixture, alternating with canned pumpkin. Beat well after each addition. - I add a little more pumpkin at first just to get it creamier, then I start adding more flour mixture. This gets really thick, so definitely mix really well adter each addition.

3. Drop by spoonfuls onto lightly greased cookie sheet and bake for 12 minutes at 350 degreed F. - Make them as round as possible. These cookies don't melt and they don't rise very much, so they will look the same after they are baked, just darker.

4. For Icing: Mix butter, milk, and 1/3 cup brown sugar in a saucepan. Bring to a boil and remove from heat.

5. Stir in vanilla. Let cool slightly then add powdered sugar a bit at a time. Keep adding until icing is nice and thick. - It seems like a lot, but it really does take a whole box of powdered sugar. If you are using powdered sugar that comes from a bag, just keep adding until it's the consistency of thick icing.

6. Drop balls of warm icing onto cookies. - Be really careful not to put too much. The icing melts over the cookie like a glaze. If you want to be able to control the icing a little better, I let the icing cool and I put them on the cookies while they are warm. This makes the icing melt a little slower and it doesn't go all over the place. Just for comparison, I put a nickel sized ball on a 2 inch cookie.

Sorry to cover the recipe with all these footnotes, but hopefully it makes the process a little smoother the first time you make them. This is the wisdom I have acquired over years of making these.

I got a little fancy this time and tried them out as muffins, and they taste great :)

Just as a side note: I would advise against being healthier and foregoing the icing unless you really like the flavor of pumpkin. They are kind of boring without the icing.

This is crazy cheap! Amazon.com currently has this deal: Pantene Pro-V Hair Spray 1 oz. Fine Touch (Pack of 36) for only 84¢! You do have to pay $1.99 shipping since it's from AmericanRX.com who is selling them on Amazon, but that is still just $2.83 for 36 bottles! That's less than 8¢ each for a product you would have to pay at least $1 for in the travel section at Target or Walmart. Crazy!

If this is a product you use, you should definitely snag it. Heck, for the amount of money you save compared to buying 1 full sized bottle, you could buy a big spray bottle and empty all these into it :)

BzzAgent Review: Mio Water Enhancer

Well, if you hadn't seen my post a few weeks ago, I will catch you up :) I was chosen as a BzzAgent to test out Mio Water Enhancer by BzzAgent.com and they sent me 2 different flavors to try out and tell others what I think (a.k.a. create bzz).

I was very excited to get these and promptly did my best to give them my fullest opinion. It may sound silly, but one of my favorite things about this is watching it mix in the water. It's so pretty looking!

Doesn't that look cool?! This was the Peach Mango flavor, which was really yummy. It was like drinking peach jell-o. Even though this picture looks like the flavor is very separated from the water, it actually mixes itself. You could technically just let it sit for a minute and it will mix on its own, but if you want it to be quicker you can just give it a bit of a swirl (think wine tasting swirl). Even better, if you are putting it in a bottle, just give it a light shake.

Really, both flavors were delicious. I tried Peach Mango and Strawberry Watermelon (which surprisingly did not taste very watermelony). Both were tasty no matter how much you added to the water. I love that you can add as much of the flavoring as you want - you can make it a light taste or full of tangy flavor. Also, Mio is a 0 calorie product! Now you can drink more water and not feel like you are missing anything by going without your juice or soda. I love that it's guilt free taste.

All in all, I loved this product and at $3.49 retail, it's very reasonably priced. I have had very little other than water with Mio in it at work for the last 2 weeks and I still have more than half a bottle left. So, if you are wanting to drink more water to be healthier or if you just want to spice things up for a little change, grab some Mio at the store and give it a go :) You won't regret it!

My receipt says I saved $89.71 :) I can't claim all of it though since I was redeeming several people's free coupons from the Facebook offer on the hair care stuff, but I still get the thrill of the free stuff :) I was so excited about those votives! They normally cost $1.99 each :)

Carmex Moisture Plus Rebate = Free (CVS Only)

I went by CVS and grabbed my free Carmex Moisture Plus :) There are specially marked packages that look like the picture above that tell you a website to print out a rebate on. So, here is what I did to get mine:

1. 'Like' Carmex on Facebook to print a 50¢ off coupon.
2. Purchase a specially marked package at CVS (looks like picture above).
3. Print out this rebate and mail it in to get your money back!

The rebate is good up to $2.99 and only valid on purchases made at CVS. My CVS had these for $3.29 so I made sure to use the 50¢ coupon to make it completely free. Purchases must be made between 9/01/11 and 12/15/11.

So next time you're at CVS, make sure to pick this one up!

I managed to snag a few deals for myself today at CVS. I must confess, I did 4 transactions to do it, but luckily there was no one waiting in line :)

I will confess, I just really wanted the Aveeno. But since I could get them each for $4, I figured it was a decent enough price for something I really like. I also love that eye liner from Physician's Formula. I use it every day so I wanted an extra to make sure I don't run out :)
